General property and molecular structure of enzymes, kinetics and machinery of enzymes reactions, and methods for purification, measurement and utilization in industrial field are mentioned. Students will be able to learn about the rudiments as well as forefront on the enzyme research. |

Chemistry of active center in enzyme: substrate specificity, coenzyme 5, 6. Kinetics: effect of temperature, pH and substrate concentration 7, 8. Kinetics: inhibition reaction, two-substrates reaction 9. Summary of property and kinetics of enzyme. Basic of electron transfer in chemical reaction 10-12. Machinery of enzyme reaction: catalytic mechanism 13, 14. Machinery of enzyme reaction: lysozyme, serine protease 15. Utilization of enzyme: food, medicine, and environment
